Here’s how: make the sauce, melt the gorgonzola cheese and a little cream in a skillet while the pasta cooks. The rich, creamy Pasta sauce is made using just two ingredientsno butter, onions, bacon, or flour for thickening. Easy, right?
Then, drain the pasta, add it to the gorgonzola cream sauce, and stir until evenly combined delicious. Finish with crunchy walnuts for a contrasting rich texture and flavor it worked extra special And quite luxurious for a dinner party or date night.

How to make gorgonzola pasta
(Note: this is a brief explanation; full recipe is at the bottom of the page)
- Cook the pasta until al dente.
- Roast the walnuts until crispy and golden. Transfer to a plate.
- Add the gorgonzola cheese and cream to the pan and stir over low heat until the cheese melts. This will be your pasta sauce: Minimum preparation, maximum taste.

- Drain the pasta, add to the skillet, and toss until well combined and coated in the delicious gorgonzola sauce. Add toasted walnuts.

- Serve immediately, garnished with more chopped walnuts, ground black pepper and fresh parsley. Pair it with a glass of white wine, and you’ve got it the perfect meatless meal!

Gorgonzola pasta ingredients
Pasta: I love this giant fusilli pasta or others short and thick pasta shape; they’re delicious for catching fancy sauces. You are welcome to use your favorite long pasta, such as linguine or spaghetti, which is also good. And if you want to make it gluten free, choose your GF pasta.
Gorgonzola: Two types of Gorgonzola are generally available – Dolce and Piccante. For this pasta recipe, you can use Gorgonzola Dolce (creamy, soft, and sweet) or Spicy Gorgonzola (aged and more crumbly than sweet gorgonzola, with a savory, strong flavor). It’s hard to choose; I love them both so much!
Cream: I use heavy cream (or double cream for my UK readers).
canary: Roasted in a pan with olive oil and a pinch of salt to make them golden and delicious. Theirs the nutty flavor and crunchiness pairs perfectly with gorgonzola. I have used a combination of these ingredients in this case epic gorgonzola pizza. It’s really a marriages are made in heaven.
Olive oil: It’s used to roast walnuts, but it’s also delicious when sprinkled over thick gorgonzola pasta.
Salt & pepper: Season the gorgonzola pasta sauce to taste, and serve with freshly ground black pepper!

Want extra fancy ingredients?
We love this gorgonzola pasta as is, but you are welcome to add additional ingredients such as toasted, grated. chicken or ham for proteins, or sauteed spinach, arugula, or peas for more vegetables, or cheese like goat cheese or parmesan for extra flavor.
What to serve with gorgonzola pasta
To add freshOn the light side, serve this pasta with a spinach and arugula salad or a cucumber fennel salad. And if you’re feeling indulgent, why not pair it with some black pepper focaccia or pesto garlic bread?
Storage tips & leftovers
This pasta dish is delicious when served fresh, soft and warm. Leftovers can be stored in an airtight container in the refrigerator up to 3 days. The cream may dry out, but adding a little milk when heating it on the stove or in the microwave will restore its creamy texture.

Gorgonzola Pasta

Pasta
- 8 oz (220 grams) short cut pasta (fusilli, penne, rigatoni…)
Gorgonzola pasta sauce
- ½ cup canary, coarsely chop
- ½ teaspoon olive oil
- 7 oz (200 grams) Gorgonzola Cheese (spicy or sweet)
- ¾ cup (180ml) double cream
- salt & black pepper, to taste

Cook your pasta until al dente in a large pot of water according to package directions — reserving ½ cup of the pasta cooking water.

Warm ½ teaspoon olive oil in a large skillet or skillet over medium heat. Add the chopped walnuts, sprinkle with salt, and stir until combined. Cook until golden and toasted, about 4 minutes. Remove from pan and set aside.

Place the same skillet over medium-high heat, add the cream, diced gorgonzola cheese, and a pinch of freshly ground black pepper. Simmer gently and stir until the cheese is melted and the consistency is smooth (about 3-4 minutes). Turn off the heat.

Drain the pasta, add to the skillet, and toss until well combined and coated with this creamy gorgonzola pasta sauce. You may need to add a little pasta water at this stage to thin the sauce until you get a smooth consistency (optional). Stir in half the toasted walnuts, and season to taste with more salt and pepper if necessary.

If desired, serve immediately with a drizzle of extra virgin olive oil, and garnish with the remaining walnuts, fresh parsley. Also some freshly grated parmesan cheese would be nice. Enjoy while it’s still warm.

A Private Blog Network (PBN) is a collection of websites that are controlled by a single individual or organization and used primarily to build backlinks to a “money site” in order to influence its ranking in search engines such as Google. The core idea behind a PBN is based on the importance of backlinks in Google’s ranking algorithm.
